1. Melt-in-the-mouth Kaju Katli

Whenever we talk about delicious Indian sweets, Kaju Katli comes first. It is a favorite of everyone from children to adults. As easy as it is to make, it looks royal. Let's know the method of making it.

Required Ingredients:

  • Cashews - 2 cups (finely ground)
  • Sugar - 1 cup
  • Water - Half cup
  • Desi Ghee - 1 small spoon
  • Silver leaf (for garnishing) - Optional

Method of Preparation:

  • First, grind the cashews in a mixer to make a fine powder and sift it so that no pieces are left.
  • Now put sugar and water in a pan and let the syrup form on medium flame. We do not need single-thread consistency syrup, just the sugar should dissolve completely in water and the mixture should be slightly sticky.
  • After this, lower the flame and gradually mix the cashew powder so that lumps do not form.
  • Keep stirring the mixture continuously until it leaves the pan and forms like a dough.
  • Now mix ghee in it and turn off the gas. Let the mixture cool down a bit.
  • Keep this mixture on butter paper and knead it with light hands. Then roll it thin with a rolling pin.
  • Finally, apply silver leaf on it and cut it into diamond shapes. Here you go, your magnificent Kaju Katli is ready!

2. Traditional and Nutritious Besan ke Laddoos

Whenever the list of Diwali special sweets is made since the time of grandmothers, Besan ke Laddoos are definitely mentioned in it. Their earthy fragrance gives the feel of the arrival of the festival throughout the house.

Required Ingredients:

  • Gram flour (Besan) - 2 cups (coarsely ground)
  • Desi Ghee - 1 cup
  • Bura or powdered sugar - 1.5 cups
  • Cardamom powder - Half small spoon
  • Chopped dry fruits (almonds and pistachios) - 2 big spoons

Method of Preparation:

  • Heat ghee in a heavy-bottomed pan. Add gram flour to it and roast on low flame while stirring continuously.
  • Besan has to be roasted until its color turns golden brown and a good aroma starts coming from it. (This may take about 15-20 minutes).
  • When the besan is roasted, turn off the gas and take the pan down. Now sprinkle a little water on it (this makes the laddoos grainy), and mix well.
  • Let the mixture cool down completely. When it is lukewarm or cold, mix powdered sugar, cardamom powder, and dry fruits in it.
  • Now take a little mixture in your hands and bind round laddoos. Your melt-in-the-mouth besan laddoos are ready.

3. Juicy and Spongy Gulab Jamuns

Any happy occasion feels incomplete without Gulab Jamuns. This is a Diwali special sweet that makes your mouth water just by looking at it. These Gulab Jamuns made from mawa or khoya are extremely delicious.

Required Ingredients:

  • Khoya (Mawa) - 250 grams
  • Paneer - 50 grams (masala-free, grated)
  • Refined flour (Maida) - 3-4 big spoons
  • Baking soda - A pinch
  • Milk - As needed
  • Sugar - 2 cups (for syrup)
  • Water - 2 cups (for syrup)
  • Cardamom - 3-4 crushed
  • Ghee or refined oil for frying

Method of Preparation:

  • First, mash khoya and paneer thoroughly with your palms in a bowl so that it becomes completely smooth.
  • Now mix maida and baking soda in it. Knead a soft dough by adding milk little by little if needed. Remember, the dough should not be too stiff.
  • Now make small balls of this dough and make sure there are no cracks in them.
  • To make the syrup, boil sugar and water in a pan. When the syrup becomes sticky (not single-thread), add cardamom powder to it and turn off the gas.
  • Heat ghee in a pan and fry the gulab jamun balls on low flame until they turn golden brown.
  • Immediately put the fried gulab jamuns into lukewarm syrup. Let them remain immersed in the syrup for at least 2 hours so that they absorb the syrup to the core.

  • When the rice is completely cooked and the milk becomes thick and creamy, add sugar and saffron milk to it.
  • Cook it for another 5-7 minutes so that the sugar dissolves well.
  • Finally, mix cardamom powder and chopped dry fruits. You can serve this kheer hot or chilled from the fridge.
